Food Ultrasound Cutting
It is based on a simple principle: the blade with vibration (sonotrode) is programmed with an amplitude (from 30 to 100 μ) and a frequency (from 20 to 30 kHz) that are defined according to the needs. It creates an acceleration higher than 105 g which allows, with the help of a press that goes up and down, cut the food.
The advantages of ultrasonic cutting are:
Clean penetration, without burrs and without compression of the product.
It allows working with soft, sticky or easily crumbling products.
Automatic cleaning of the blade.
No damage to the different layers caused by debris adhered to the blade edge.
Extremely fine slice cutting, very well calibrated, with a tolerance hitherto inaccessible to other processes.
High productivity.
Eliminates crumb and reduces product loss.
Security far superior to other traditional cutting procedures.
It allows to cut products with inserted elements (nuts, pistachios, olives, raisins, etc.) without these moving and therefore without affecting the overall texture of the product.
