1. Structural Components

Cutting System:

Blade Section: The blades of a cheese cube slicer are a key component, typically made of high-quality stainless steel. This material boasts high hardness, excellent sharpness, and corrosion resistance, ensuring long-term use without rusting or dulling. Blade shapes vary, with straight blades being the most common, featuring very sharp edges for neatly slicing cheese. Some machines also feature blades with serrated edges, which helps reduce cutting resistance when cutting harder or more resilient cheeses, making the cutting process smoother. The number of blades depends on the machine’s function and cutting requirements. Some machines have only a single blade for slicing cheese into thin slices; while others for cutting cubes have multiple sets of parallel blades, allowing for simultaneous cutting in multiple directions to form cubes.

Blade Drive Unit: To enable efficient cutting, a dedicated drive unit is installed. The most common drive method is motor drive, which transmits power to the blades via belts, chains, or direct connections. The motor speed can be adjusted according to the type of cheese and cutting requirements. For example, for softer cheeses, the motor speed can be appropriately reduced to prevent the cheese from being squeezed and deformed during cutting; for harder cheeses, the motor speed can be increased to enhance cutting force.

Feeding System:
Feed Conveyor Belt:The feeding conveyor belt is responsible for transporting the cheese to the cutting area. The conveyor belt is generally made of food-grade rubber or plastic, which has good wear resistance and anti-slip properties, ensuring that the cheese does not slip or fall during transport. The conveyor belt speed is adjustable; by controlling the conveyor belt speed to match the cutting speed of the blades, efficient and accurate cutting is achieved.

Feed Guide Device:To ensure the cheese enters the cutting area accurately, the feeding system is also equipped with a guide device. These guide devices can be simple baffles or adjustable tracks that can be adjusted according to the shape and size of the cheese, ensuring that the cheese enters the cutting area in the predetermined direction and position.

Control System:
Control Unit:The control system is the brain of the cheese cube cutter. It can be a simple mechanical control device or a complex electronic control system based on a microprocessor. The control unit allows for setting and adjusting parameters such as cutting speed, feed rate, and cutting size. For example, when cutting cheese cubes of a specific size, the control system can precisely set the blade spacing and cutting length, and the machine will automatically cut according to the settings.

Sensors: To ensure accuracy and safety during the cutting process, the machine is equipped with various sensors. For example, a photoelectric sensor at the feed inlet detects whether cheese has entered the cutting area; a pressure sensor in the cutting area detects the pressure between the blade and the cheese. When the pressure is abnormal, the control system automatically adjusts the cutting parameters or stops the machine to avoid blade damage or uneven cheese cutting.

Machine Body and Casing: The machine body is generally made of metal materials, such as stainless steel or aluminum alloy, providing good strength and stability to support the entire cutting machine. The casing primarily serves a protective and safety function, typically made of plastic or stainless steel, and its ergonomic design facilitates operation and maintenance. The casing also includes various operating buttons, a display screen, and safety doors.

2. Working Principle The cheese is placed on a feeding conveyor belt, which transports the cheese to the cutting area at a set speed. When the cheese reaches the cutting area, sensors detect its position and send a signal to the control system. The control system drives the cutting system’s blades to cut the cheese according to preset parameters, such as cutting size and cutting mode (whole slice cutting, cube cutting, etc.). During the cutting process, the blade drive automatically adjusts the blade speed and cutting force based on the cheese’s hardness, thickness, and other characteristics to ensure the cheese is successfully cut into the desired shape and size. For cube cutting, typically a set of vertical blades first slices the cheese into thin slices, and then another set of horizontal blades cuts the slices into cubes. After cutting, the cheese cubes are discharged through the outlet. The entire process is continuous and automatic; as long as feeding continues, the machine will continue cutting.

About Cheersonic
Cheersonic manufactures the leading portioning equipment for bakeries producing fresh and frozen desserts. Since 1998 bakers have used Cheersonic machines to cut, slice and portion cheesecake, pie, layer cake, loaves, butter, cheese, pizza, sandwichs, and more. Cheersonic offers ultrasonic cutting solutions that support start-up bakeries and high production commercial facilities alike. Small standalone machines can be used in manual baking facilities and large inline robotic solutions aid in high speed production.

Cheersonic offers many ultrasonic slicing models, both inline and offline applications, with production speeds of 80 to 1,500 cakes or pies per hour.

Cheersonic’ latest offline introductions include ultrasonic cutting with or without divider inserts between each slice. This improves the quality of the cut and makes for a much better product presentation for the customer. In addition, robotic arm improves the speed, efficiency, and accuracy of the cutting process, producing professional looking products every time.
