Ultrasonic Dough Cutting for High-Volume Bakery Production
UFM2200 Ultrasonic Dough Cutting for High-Volume Bakery Production
Dough forming and cutting are common bottlenecks that restrict the production speed, flexibility and output efficiency of commercial bakery operations. Traditional dough processing equipment typically requires lengthy and costly downtime during product changeovers — for instance, switching production from standard cookies to filled dough bars — while failing to deliver consistent product sizing and forming quality in mass production. Adopting advanced high-speed, versatile wire-cut and ultrasonic cutting integrated systems effectively solves these operational pain points, streamlining production workflows and boosting overall production yields.
Product changeover is one of the most prominent efficiency limiting factors on commercial bakery production lines. Traditional forming and cutting equipment struggles to adapt quickly when production plans shift from conventional baked goods to complex products with fillings and multi-layer structures, unable to match the rhythm of high-volume continuous production.
Modern high-speed dough cutting solutions integrate upgraded mechanical control, safety optimization and simplified sanitation designs, achieving comprehensive improvements in operational precision, equipment safety and daily maintenance efficiency compared with conventional processing equipment. Featuring powerful functional versatility, these cutting systems support the flexible production of a wide range of baked goods and specialty products, covering standard dough bars and filled bars, multi-color baked goods, filled and encapsulated cookies, customized pet treats, as well as various frozen dough processing applications, helping bakery enterprises enrich product portfolios and expand market layouts.
In terms of production capacity, the high-efficiency cutting structure enables the equipment to reach a maximum processing speed of 300 cuts per minute. Crucially, this high production speed is maintained alongside exceptional cutting accuracy and stable single-piece dough weight consistency. The precise cutting performance effectively reduces dimensional deviations and defective products, minimizing raw material waste throughout high-volume, long-duration production shifts and improving overall production profitability.
The equipment is equipped with advanced servo motor control systems to support high-precision cutting operations. Servo units independently regulate wire cutting positioning and stroke length, and support nearly infinite customized cam profile settings. This intelligent control structure allows operators to rapidly adjust cutting wire height, material drop parameters and other core settings during product switchovers, greatly shortening changeover time and improving production line flexibility for diversified order demands.
The optional ultrasonic cutting attachment further optimizes the processing of difficult-to-cut dough materials. For viscous, tough or structurally complex dough that cannot achieve clean separation via traditional mechanical cutting, ultrasonic high-frequency vibration delivers smooth, burr-free cutting results, avoiding dough deformation, adhesion and cross-section irregularities. To meet the production needs of co-extruded composite products, the system can also be equipped with matched internal and external pumping modules to realize stable and efficient co-extrusion molding and cutting.
The equipment adopts a modular and detachable structural design centered on hygienic and efficient maintenance. Key components including the feeding hopper, roller assemblies, cutting harp and wire frame can be quickly disassembled without complex tools. This structural optimization greatly simplifies daily sanitation procedures and preventive maintenance work, shortens equipment downtime for cleaning and upkeep, and effectively protects operators’ safety during routine production line inspections and maintenance operations, meeting strict food production hygiene standards.
About Cheersonic
Cheersonic manufactures the leading portioning equipment for bakeries producing fresh and frozen desserts. Since 1998 bakers have used Cheersonic machines to cut, slice and portion cheesecake, pie, layer cake, loaves, butter, cheese, pizza, sandwichs, and more. Cheersonic offers ultrasonic cutting solutions that support start-up bakeries and high production commercial facilities alike. Small standalone machines can be used in manual baking facilities and large inline robotic solutions aid in high speed production.
Cheersonic offers many ultrasonic slicing models, both inline and offline applications, with production speeds of 80 to 1,500 cakes or pies per hour.
Cheersonic’ latest offline introductions include ultrasonic cutting with or without divider inserts between each slice. This improves the quality of the cut and makes for a much better product presentation for the customer. In addition, robotic arm improves the speed, efficiency, and accuracy of the cutting process, producing professional looking products every time.
