Ultrasonic Cheese Weighing and Cutting Process for Triangular Cheese
In the large-scale processing of cheese, triangular cheese has become one of the mainstream specifications in the market due to its attractive shape, convenient packaging and eating. With the dual advantages of precise weighing and non-damaging cutting, the ultrasonic cheese weighing and cutting machine completely solves the pain points of traditional cutting such as adhesion, uneven weight and shape damage, realizing the standardized production of triangular cheese.
During operation, the automatic conveying device first sends the whole cheese to the weighing area. The high-precision sensor accurately detects the cheese weight with an error controlled within ±0.1g. Combined with the preset weight of triangular finished products, the PLC control system automatically calculates the optimal cutting scheme, determines the cutting angle and size, and ensures the uniform weight of each finished product.
The core of the cutting link relies on ultrasonic high-frequency vibration technology. The equipment converts electric energy into 40kHz-60kHz high-frequency mechanical vibration, which is transmitted to the food-grade stainless steel cutter head via the horn. When the cutter head contacts the cheese, a micron-level gap is formed, greatly reducing cutting resistance and preventing cheese from adhering to the cutter. For cheeses of different textures, parameters can be flexibly adjusted: lower vibration frequency for soft cheese and higher frequency for hard cheese. Cooperated with the precise positioning system, it ensures smooth, slag-free and deformation-free triangular cuts.
The whole cutting process is fully automated, from raw material feeding, weighing, positioning to cutting and discharging, without excessive manual intervention. It can process 1,500 finished pieces per hour, more than 5 times the efficiency of manual cutting. The machine body is made of 304 stainless steel with seamless welding, supporting quick disassembly and cleaning, complying with food processing hygiene standards and effectively eliminating microbial contamination.
Compared with traditional mechanical cutting, this equipment not only greatly reduces raw material loss rate, but also perfectly preserves the original cream structure and flavor of cheese. The cut triangular cheese has regular shape and rounded edges, effectively reducing damage during transportation. Its precise weighing and cutting capabilities provide a standardized solution for cheese processing enterprises, helping to improve product quality and market competitiveness.
