Problems of cutting food

In the food sector, the cutting process is often decisive for the quality of the product. Especially the cut of pasty, creamy, multi-layered or hot products is, in the food processing industry, a known problem.
Waterjet cutting is highly effective on hard (frozen) products, but with products, for example, linked to the bakery, has the disadvantage of spreading product by the cutting surface. This decreases the final finish, which is so important in the food sector, as it requires more steps in the production chain to obtain the final product (cleaning of the working area of the machine, finishing of the product, etc.).

Precision

Only by means of ultrasound can cut almost without product spreading. A clean and precise cut is achieved even in the most difficult to cut products.
The cutting tool oscillates thanks to the ultrasonic waves, allowing to make the cut almost without exerting pressure. Because the blade is completely detached from the product thanks to the constant oscillations, very soft, friable or layered food products (eg puff pastry with cream filling) can be cut with an excellent result. Also creamy products, pasty, still hot or even baked goods with nuts. The blade almost does not get dirty as the vibration causes the dirt to come off on its own.
